Jay Curtis-Hodge, 29, was one of three people from Young arrested over the violent attack.
His charges of robbery in company causing grievous bodily harm and police pursuit were heard at Campbelltown Local Court on Friday, but he did not appear.
His case will next be before court on January 12 when he will appear at Burwood Local Court.
Police said 86-year-old Frank Carlino - who uses a walking stick - was robbed and punched in an underground carpark at Chester Hill on Wednesday morning.
He had just withdrawn his pension money from an ATM.
Jennifer Clarke and Kerry Whiteford - both from Young - were also refused bail over the same incident.
