Paramedics and NSW Fire and Rescue were called to the site on Scenic Road, Young, at 9.30am on Wednesday, where they found a man in his 30s was found trapped in a meat auger.

FRNSW Inspector Dean Campbell said another worker had switched off the meat auger and was supporting the patient.

He said paramedics provided initial first aid while they developed a plan to extricate him.

Inspector Campbell said access was difficult, and they developed several plans over the morning to work out the best way to get him out.

The emergency crews ended up reversing the auger by hand.

"We had to disassemble the machinery and cut away the guarding around the machine to gain access," Inspector Campbell said.

"When the Toll flight with the critical care paramedic and doctor arrived on the scene, under their supervision, we were able to release them. The whole thing took almost three hours."

Inspector Campbell said all the emergency services worked extremely well together to rescue the man.

Ambulance Inspector Stephen Pollard said the patient was intubated and placed in an induced coma by the specialist medical team from the Toll Ambulance Rescue helicopter.

He was transported via helicopter to the Canberra Hospital in a serious but stable condition.

"It must have been really hard for the patient who was in a fair bit of pain before paramedics arrived," he said.

"It was a particularly delicate and protracted incident to free the man from the machinery which was about five metres off the ground on a platform."

Inspector Pollard said while the man was stuck for a long time, his colleagues were there with him throughout, providing physical and mental support, adding they did a "great job".

SafeWork NSW was onsite and and a spokesperson said the incident is being investigated after the man became trapped in machinery while undertaking work at an abattoir in Young.
