The achievement caps a massive year for the hard-running forward who was part of Young's Group Nine Sullivan Cup premiership winning side.
Prest will join the squad for a short training camp at the NSWRL Centre of Excellence before departing Sydney on Sunday, November 17.
The two-week tour will include games against the England Community Lions and Leeds Rhinos Academy.
They return home on December 2.
Country coach Shaun Davison, based in the Northern Rivers, says he's looking forward to working with the Young Cherrypicker.
"Mitch has come in late as a back-rower so I haven't had anything to do with Mitch yet. I'm looking forward to working with him and it's certainly a great achievement," coach Shaun Davison said.
"He obviously has a lot of talent to be called in, it's a very strong under 16s Country side.
"He might play left edge, but that could change. I'll have to talk to Mitch and we'll have a look at things when we get into camp. He'll definitely have plenty of game time."
Davison said it's a massive opportunity.
"I was lucky enough to go on a trip to the UK when I was playing and it was one of the highlights of my career," he said.
"You make life-long friends, you have the opportunity to perform in front of interested parties like talent scouts. It's also a good experience to visit a different country and come together and make good mates."
Former Young junior Matt Noakes, who plays for Red Bend and represents Western Rams, has also been selected in the 20-player Country squad.
